Dark chocolate and mandarin jam brioche bread / Brioche kruh sa tamnom čokoladom i džemom od mandarina

I love to wake up in the morning and the first thing I do is drinking my favorite cup of coffee. It's not addiction, it's something I really enjoy. I always try to have a healthy breakfast which includes fresh seasonal fruits or smoothies, and sometimes cereals.

BUT, there are these moments, when all I want is a fresh chocolate buttery croissant, or warm baked brioche filled with chocolate or nougat cream, accompanied, of course, with coffee. Real comfort food. :)

This was one of those days. I woke up and knew I had to prepare this wonderful brioche bread, filled with tangy, aromatic mandarin jam and dark chocolate.

Here's the recipe. :)

Ingredients

150g buckwheat flour
200g white bread flour
pinch of salt
20g fresh yeast
150 ml warm milk
1 egg
70g unsalted butter
50g unrefined sugar
zest of one orange

The filling
150g mandarin (or orange) jam
200g dark chocolate (at least 60% cocoa solids)

To finish
3 tbsp melted butter
3 tbsp milk

Dissolve the yeast in warm milk and the sugar. Mix both types of flour, add pinch of salt and orange zest. Make a hole in the middle of flours and add warm milk with yeast. Add an egg, slightly beaten and melted butter. Knead the dough, or use the stand-up mixer, until it's elastic and detaches from your fingers easily. Cover with cloth and let rest in a warm place for 2 hours.
Knead the dough again for 5 minutes. Turn the dought out on to a floured surface and roll it to a 25 cm square. Spread the dough with jam and sprinkle with grated dark chocolate. Roll out the dough and place it into a greased loaf tin. Let rest for 15 minuts.
Preheat the oven to 200 C. Mix melted butter with milk and brush it over the dough.
Bake the brioche for about 35-40 minutes.

Recept na hrvatskom

Sastojci
150 g brašna od heljde
200 g pšeničnog brašna
prstohvat soli
20 g svježeg kvasca
150 ml toplog mlijeka
1 jaje
70 g maslaca
50 g šećera
korica 1 naranče

Nadjev
150 g džema od mandarine (ili naranče)
200 g tamne čokolade (najmanje 60% kakao udjela)

+ 3 žlice maslaca
   3 žlice mlijeka

Otopite kvasac u toplom mlijeku zajedno sa šećerom. Pomiješajte obje vrste brašna, dodajte koricu naranče i prstohvat soli. Napravite udubinu u sredini brašna, pa dodajte kvasac sa mlijekom, umućeno jaje i otopljeni maslac. Izradite ručno, ili mikserom elastično tijesto te ostavite na toplom mjestu pokriveno krpom oko 2h, dok ne udvostruči volumen.
Premijesite tijesto pa ga razvucite u obliku kvadrata, premažite džemom od mandarine i posipajte naribanom tamnom čokoladom. Zarolajte tijesto pa ga premjestite u namašćen lim za kruh. Pustite da se još diže 15 minuta.
Pećnicu stavite grijati na 200C. Otopljeni maslac pomiješajte sa mlijekom pa premažite kruh.  Pecite u zagrijanoj pećnici oko 35-40 minuta.

I ja se trudim doručkovati zdravo - a confort food za mene je bijelo pecivo s maslacem i pekmezom. Iako mislim da ne bih prigovarala niti da netko ovo stavi pred mene :) Prekrasno!

Kako bi ja rado ovo za doručak umesto granole koju upravo jedem!
Meni je sad jedan od onih dana kada bi najradije smazala nešto čokoladno i mirisno. Al trebalo razmišljati juče o tome:)
